Grilled Sicilian Eggplant with Red Onions

You will need:

2 Sicilian eggplants (sliced thin with skin)
4 cloves garlic (crushed & chopped)
1 red onion (sliced thin)
½ cup basil (chopped)
4 tablespoons ketchup
1 teaspoon hot sauce
Olive oil (for grilling & drizzling)
1 tablespoon capers with about 1 tablespoon of juice

Grill eggplant on griddle with a little olive oil drizzled over eggplants.
Grill until golden.
Grill garlic, onions, basil and capers together and add ketchup and hot sauce.
Place in dish with onion mixture over eggplant and serve.

Poor Man’s Chef Salad

Here’s a delicious and delectable recipe for chef salad- made all from deli ends. Let me show you how-

You will need:

1 head of iceberg lettuce
1 can red kidney beans (rinsed & drained)
1 apple (peeled & sliced)
1 small red onion (sliced thin)
½ cup of ham (ends from the deli)
2 stalks of celery (sliced thin)
½ cup of cheese ends from the deli
1 red bell pepper (sliced thin)
½ gourmet cucumber

Dressing:

½ cup ketchup
¼ cup mustard
¼ cup olive oil
2 tablespoons vinegar
½ teaspoon hot sauce
2 tablespoons water
2-3 tablespoons honey

Chop all ingredients for salad and place in bowl.

Combine all ingredients for dressing and drizzle over salad.

Very Berry Ice Cream

So Fresh, So Delicious and easy on the waist!

You will need:

2 Quarts strawberries, washed and then frozen
2 Quarts blueberries, washed and then frozen
2 cups light buttermilk
¾ cup 1% milk
¼ cup honey
½ teaspoon nutmeg
½ teaspoon cinnamon
4 tablespoons powdered sugar
½ teaspoon vanilla

Combine all of above ingredients in food processor and blend until smooth.

You can store this in plastic container in the freezer, but take out about fifteen minutes before serving to soften.

Bisquick Baked Chicken


You will need:
 8 chicken thighs
8 drumsticks
2 cups Bisquick
1 cup flour
3 eggs (well beaten)
½ tsp. paprika
½ tsp. chili powder
½ tsp. cumin
4 tablespoons of olive oil for drizzling

Preheat oven to 350 degrees F. Clean chicken and remove skin. Place flour in bowl, eggs in bowl and Bisquick in bowl plus spices mixed with the Bisquick.

Dip chicken in flour, then eggs and finally Bisquick. Place in baking dish and drizzle with olive oil. Bake for about 40 to 45 minutes.

Stuffed Crust Pizza with Fresh Tomato & Basil

You will need:

1 fresh pizza dough
3 vine ripe tomatoes (sliced thin)
3 cloves garlic (crushed & chopped)
1 cup fresh basil (chopped)
2 cups shredded mozzarella
¼ cup Romano cheese (grated)
2 tablespoons oregano
3 tablespoons olive oil
flour for dusting

Preheat oven 400 degrees.

Dust pizza dough with flour before stretching out pizza dough.

Dust pizza pan with four before placing pizza dough on pan.

Place pizza dough on pan and place mozzarella around the perimeter then fold dough over mozzarella and press dough closed.

Top with tomatoes, basil, garlic, mozzarella, Romano cheese, oregano, and drizzle with olive oil.

Place in oven for about 20-25 minutes, or until crust is golden.

Blueberry Cake with Brown Sugar Topping

My blueberry cake is sweet enough to satisfy and is almost guilt free.
This delicious recipe is so simple and so good-

You will need:

1 box yellow cake mix
3 eggs (2 egg whites plus 1 whole egg)
½ cup oats
1 vanilla flavored yogurt
½ cup apple sauce
1 ½ cups 1% milk
2 quarts blueberries

Brown Sugar Topping-

½ stick unsalted butter (melted)
¼ cup brown sugar
¼ cup granulated sugar
½ cup all purpose flour
About 2 tablespoons nutmeg
About 2 tablespoons cinnamon

Pre-heat oven 350 degrees.

Combine cake mix, eggs, oats, yogurt, apple sauce, and milk.
Mix with electric mixer on medium- high speed, until smooth and creamy.

Meanwhile, melt butter on stove top over medium heat.
After butter is melted, in small bowl combine all ingredients for Brown Sugar Topping.

After all cake ingredients are mixed well with spoon, gently toss in blueberries. (Be careful not to crush the blueberries!)

Butter baking dish and pour in cake mixture, then sprinkle Brown Sugar Topping.

Bake for about 40-45 minutes or until golden.

Shrimp & Monk fish Stew with Spaghetti

You will need:

1 lb. of Monkfish
1 lb. of shrimp
2 stalks celery (chopped)
2 bunches of scallions (sliced)
4 cloves garlic (crushed and chopped)
¼ of lemon (sliced)
½ cup cilantro (chopped)
½ cup parsley (chopped)
½ jalapeño (sliced thin without seeds)
1 tablespoon capers (with a tablespoon of caper juice)
½ tsp. red pepper flakes
½ tsp. black pepper
½ tsp. paprika
about 4 tablespoons olive oil
1 ½ cup vegetable broth
½ inch thick piece of ginger (sliced thin)

In sauce pan place 2 tablespoons olive oil and all veggies including ginger, lemon, capers, red and black pepper.
Place monk fish on top of veggies.
Simmer on low for a few minutes, until veggies begin to soften. Add shrimp.

Add about ¼ cup of broth about every 5 minutes or so.

When monk fish is white on inside the stew is ready. You can break the monkfish into chunks. Turn heat off and drizzle a little more olive oil over stew.

Prepare favorite spaghetti and serve.

Jalapeño, Onion & Tomato Omelet

You will need:

2 egg whites, plus one egg with yolk (beaten)
½ tomato (chopped)
½ jalapeño (sliced thin)
1 clove garlic (crushed and chopped)
3 tablespoons olive oil
4 tablespoons olive oil
1 tsp Tabasco sauce
½ tsp Signature Spice Mix

Heat griddle with two tablespoons of olive oil.

Place tomato, jalapeño, onion and garlic on griddle. Add ketchup and Tabasco sauce and Signature Spice Mix to veggies and toss until onions become soft.

Cover and set aside.

Scrap grill clean and add 1 tablespoon of olive oil to griddle. Pour eggs on griddle and when eggs seem firm enough flip and finish cooking few more seconds.

Place on plate and fill with veggies and fold omelet over.

So Simple - So Good!

Baked Turkey Breast with Lemon and Herbs

You will need:

3 ½ lb. turkey breast with bone

Turkey marinade:

¼ cup honey
juice of 1 lemon
½ tsp. garlic powder
½ tsp. black pepper
1 tsp. Living the Gourmet Dry Herb Rub
¼ cup olive oil
½ tsp. Paprika

Preheat oven 350 degrees

Rub turkey breast with marinade and place in oven.

Bake for about 45-50 minutes

About 15 minutes before turkey has completed cooking pour about ½ cup of water into pan to create drippings for the turkey.

Dreamy & Easy Chocolate Chip Cake

You will Need:

1 box chocolate cake mix
3 eggs (2 egg whites plus 1 whole egg)
½ cup oats
1 coffee flavored yogurt
½ cup apple sauce
1½ cups Light Buttermilk
½ cup Chocolate Chips

Pre-heat oven to 350 degrees.
In electric mixer, combine all above ingredients and mix well.
Pour in greased baking dish and bake about 45 minutes.

Oven Baked Spareribs

You will need:

4-5 lb. package of spareribs
3 cloves garlic (chopped)
1 teaspoon whole cloves
2 tablespoon Living the Gourmet Signature Spice Mix
2 tablespoon Living the Gourmet Dry Herb Rub

-RUB-

2 tablespoon Living the Gourmet Dry Herb Rub
3 tablespoon Olive Oil
3 tablespoon Curry
3 tablespoon garlic powder
3 tablespoons paprika
1 cup ketchup
¼ cup brown sugar
¼ honey
1 tablespoon vinegar
3 tablespoons soy sauce
3 tablespoons teriyaki

Pre-heat oven to 375 degrees.

Bring spareribs to a quick boil with garlic, cloves, Living the Gourmet Dry Herb Rub, and Signature Spice Mix

Let spare ribs simmer for about 15 minutes, then drain and let spare ribs cool.

Then cut into individual ribs.

Combine all ingredients for rub and mix well.

Place ribs in large baking dish and pour rub over the ribs and mix well.

Bake in oven vat 375 for 15 minutes.

Then lower to 300 degrees for another 45-50 minutes.

Juicy & Delicious Breaded Pork Thins

You will need: 
 3 lbs. boneless port roast 
2 cups flour plus 
4 eggs (beaten) 
3 cups seasoned bread crumbs plus 1 tablespoon LTG Signature Spice Mix 
4 tablespoons olive oil 

 Slice pork as thin as possible Set up flour, eggs, and bread crumbs in separate bowls. Dip the pork first in the flour, then eggs and finally in bread crumbs. 

 In large frying pan add olive oil and heat, (not too much or oil will splatter). Add breaded pork thins to heated olive oil. Sauté pork for about 4 minutes on each side.

Golden Potato Crisps

5 lb. of potatoes
4 tablespoons of olive oil
2 tablespoons Living the Gourmet Dry Herb Rub
2 tablespoons Signature Spice Mix
1 tablespoon Chili Powder

Preheat oven 375 degrees

Peel and slice potatoes in ¼ inch thick slices.

Place potato slices in large baking dish. Drizzle potatoes with olive oil and spices.

Toss potatoes and place in oven.

Bake for about 45-50 minutes.
