~ Quick and Delicious Banana Bread ~



Inspired by:  The New McCall’s Cookbook

Ingredients:

1 ¾ cups all-purpose flour – sifted
2/3 cup sugar
3 tsps. baking powder
½ tsp salt
¼ tsp baking soda
1/3 cup butter
1 cup mashed very ripe banana – (2 or 3)
2 eggs

Preheat Oven 350 degrees:

Butter a loaf pan.

In a large bowl, sift flour with sugar, baking powder, salt and baking soda.  Cut in butter until mixture resembles coarse crumbs.

Add banana and eggs; with electric mixer at low speed, beat 2 minutes.

Turn into prepared pan.

Bake 1 hour and 10 minutes, or until cake tester inserted in middle comes out clean.

This is a very old cookbook that belonged to my mother. It seems everything I make from this book turns out wonderful.

I make banana loaf all the time...my recipe is slightly different than this though...I don't put salt in mine. One of my favourite cakes!!

Seems many of those old cookbooks never fail, I have a few like that too Catherine. I'll have to try this recipe Catherine. My son Red loves banana bread almost as much as I do. We sure could use a sweet treat to cheer ups up.

That looks like a great loaf! I wish I had some over-ripe bananas at home right now so I could make it! I've been really bad at visiting blogs lately... life has been crazy! Just catching up :)
